Job Purpose

The Pastry Chef is responsible for the creation and preparation of all pastries and desserts in the kitchen for the restaurant/bar of the Hotel.

Key Tasks and Responsibilities

  • Design, bake, fill and frost a variety of pastries and desserts.
  • Create new and exciting recipes for pastries and desserts.
  • Create and plan new and exciting pastry and dessert menus for guests, infusing the concepts and standards of the hotel.
  • Create special pastry and dessert menus for guests who have special diet needs like diabetics, vegetarians, anemics, etc.
  • Design and create pastry and dessert spreads for buffets, private catering, conferences and other occasional events for the Hotel.
  • Ensure that pastries and desserts are prepared under the right conditions (and temperatures).
  • Ensure that all pastry and dessert preparation equipment is cleaned and maintained under hygienic conditions.
  • Manage inventory and costs for pastry and dessert menus.
  • Manage vendor communications for more affordable and high-quality pastry and dessert item purchases, including equipment.
  • Oversee cooks and other line workers to prepare pastries and desserts.
  • Oversee the preservation of pastries and desserts over standard periods of time.
  • Keep up with current industry trends and latest techniques.

Requirements

  • In-depth knowledge of pastries and desserts.
  • In-depth knowledge of kitchen equipment.
  • Flexibility to work on shifts, night-hours, weekends and holidays.

Qualifications

  • Degree or Diploma in Catering and Hospitality Management.
  • 2 years of experience or more in required field or similar.
  • HND holders must have more than 2 years of experience.
  • HACCP certification is a plus.
